Instructions

  1. Soak the cashews in filtered water for one night or at least 2 hours. Refrigerate.
  2. Drain the soaking water and add fresh filtered water.
  3. In a blender, add all the ingredients for the Chipotle Creamy Salsa and blend until smooth.
  4. Store in a jar. Refrigerate until use.

Assembly

  1. To assemble the stick tacos, heat the tortillas.
  2. Fill them with the refried beans and roll them up.
  3. Fry the rolled tortillas until golden brown.
  4. Serve with the Chipotle Creamy Salsa for dipping.

Note

  • For a spicier salsa, add more chipotle peppers or other hot peppers to taste.
  • You can also add other toppings to your stick tacos, such as shredded cheese, sour cream, or avocado.
  • If you don't have cashews, you can substitute another type of nut, such as almonds or walnuts.
