Flaming Figs with Pistachios

  1. In a medium saucepan over medium heat, combine the orange juice, butter, and brown sugar. Cook until the sugar melts and begins to caramelize, stirring frequently to prevent burning.

  1. Add the figs and toss to coat them in the orange-sugar syrup.
    Use ripe, fresh figs for the best flavor. If the figs are not quite ripe, you may need to cook them for a few minutes longer in the orange-sugar syrup before adding the tequila.

  1. Carefully pour the tequila into the corner of the pan and tilt it towards the flame to ignite the alcohol. Flame the figs for a few seconds, swirling the pan to distribute the flames evenly.
    Be careful when flaming the figs. The alcohol can burn quickly, so make sure you have a fire extinguisher or other means to put out the flames if necessary.

  1. Continue cooking for a minute or two more, until the flames have subsided.

  1. Serve warm immediately, optionally over vanilla ice cream.
    This dish is also delicious served with a dollop of crème fraîche or whipped cream
