Flaming Figs with Pistachios
Ingredients
Instructions
-
In a medium saucepan over medium heat, combine the orange juice, butter, and brown sugar. Cook until the sugar melts and begins to caramelize, stirring frequently to prevent burning.
-
Add the figs and toss to coat them in the orange-sugar syrup.Use ripe, fresh figs for the best flavor. If the figs are not quite ripe, you may need to cook them for a few minutes longer in the orange-sugar syrup before adding the tequila.
-
Carefully pour the tequila into the corner of the pan and tilt it towards the flame to ignite the alcohol. Flame the figs for a few seconds, swirling the pan to distribute the flames evenly.Be careful when flaming the figs. The alcohol can burn quickly, so make sure you have a fire extinguisher or other means to put out the flames if necessary.
-
Continue cooking for a minute or two more, until the flames have subsided.
-
Serve warm immediately, optionally over vanilla ice cream. This dish is also delicious served with a dollop of crème fraîche or whipped cream
